Hi!  Spain generally gets its farm labor from Morocco and Romania at cheaper salaries, but the main agrcultural areas are Andalucia and Extremadura (Fruits and vegetables, grains, olives, etc).  In the Castillas you’ll run into a lot more cattle, sheep, goats.
When I’ve looked for jobs here I’ve always used http://www.infojobs.com or www.trabajo.com.  Just select Agriculture under options and the province you’d like to work in.

Agricultural work is notoriously low paid in Spain, with, as has been said, mainly North Africans and Eastern Europeans doing the grunt work.
I don’t know where you are but there is an English company, Langmead, http://www.langmeadfarms.co.uk/recruit.html, and they have a massive operation in Murcia, you could try e-mailing them.
