should i stay or should i go… my schengen visa expires soon before our marriage paperwork is approved.

mi novia espanola and i are in the process of getting all our paperwork together to get married. we go to the u.s. embassy on the 25th of oct. and we should be able to get the paperwork filed soon after. but heres the kicker… i came to spain aug. 8th and my visa is up on the 5th of november. should i stay and wait for the paperwork to come through and risk the overstay or leave until it is approved or in the worst case scenario wait another 180 days for another visa and come back? we have been told it can take up to 3 months for things to go through. we live in pineda del mar, a small community north of barcelona on the coast so we are not sure how quickly things go here compared to madrid or barca. any thoughts out there… we are not too keen on separating for a long time but will do what is necessary. thanks!
