Does anyone have any idea how available IT jobs are in the Valencia region I only speak a little spanish which may prove a problem.

Barring someone coming along who has looked for IT jobs in the Valencia area specifically, check out jobs in Spain which has links to all the major job sites. From those sites you can filter for IT jobs (on most of them anyway) and get an idea of the job field for yourself.
